Pregnancy cravings

Lately I have been dreaming of creamy, chocolately, comfort foods.

Blame it on pregnancy cravings if you will, but I think it’s more just the fact that chocolate, and cream have a way of making everything so much better in the world.

I decided to put my cravings to good work, and research some tasty ingredients to create the yummy comfort food with some solid nutritional benefits.

This is what I came up with:

Handful Raw cacao nibs
30ml Raw cacao powder
10ml Coconut oil
Handful Coconut flakes
Half a cup of raspberries
100ml Organic rolled oats
6 diced dates
1 TBL spoon of raw honey
12 chopped Brazil nuts
1/2 cup of mixed seeds: sunflower, sesame, flax seeds, pumpkin seeds, and chia seeds

I blended the seeds in a nutribullet along with 6 Brazil nuts.
Placed that at the bottom of a bowl, as the base for my desert and popped it in the fridge to chill.

In a bowl I added the oats, cocoa powder, cocoa nibs, coconut oil, raspberries, the 6 dates and honey and 2TBL spoons of chia seeds, to 100ml of boiling water and allowed it to soak.
Once it had cooled down to room temperature, I blitzed it through the nutribullet to create a smoother texture.

I added the creamy chocolate mixture on top of my seed base, and decorated with Brazil nuts, raspberries, and coconut flakes.

I ate it just like that…
But if you are feeling extra decadent, some full cream Greek yogurt or a bit of cream added to the mix is just as good…
